Stuffed Shrimp Potatoes

  • 2 Klondike Goldust® Potatoes
  • 1/2 cup shredded sharp cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup minced onion
  • 2 Tbsp. butter
  • 1/2 Tbsp. paprika
  • 2 tsp. Worcestershire sauce
  • 1/4 lb. cooked chopped shrimp
  • 2 Tbsp. lemon zest
  • 1/2 tsp. salt and pepper

Preparation Steps

  1. Bake Klondike Goldust® Potatoes at 350° F for 1 hour, or until they are cooked through. Remove from oven and let cool. Slice potatoes in half, lengthwise. Gently scoop the meat of the potato into a mixing bowl leaving about 1/2 inch around the shell to support the filling.
  2. In the mixing bowl, combine the potato meat, paprika, Worcestershire sauce, chopped shrimp, cheese, butter, onion, sour cream, lemon zest and salt and pepper to taste. Mix thoroughly and spoon filling into the potato shells.
  3. Place back in a 350° F oven for 10 minutes or until cheese in melted. Transfer to a serving dish and garnish with chopped green onion, shrimp and freshly cracked pepper, if desired.
