  • 6 cups diced Klondike Gourmet® Medleys, cooked
  • 1 large onion, diced
  • 3 garlic cloves, minced
  • 1 large bell pepper, diced
  • 3 cups vegetable medley
  • 4 roma tomatoes, diced
  • 2 tbsp sun dried tomato paste
  • 1/2 cup fresh Italian parsley
  • 2-3 tablespoons fresh thyme
  • 1 tablespoon paprika
  • 1 pinch saffron (optional)
  • 2 cups vegetable stock
  • 3 lemons, quartered
  • Extra virgin olive oil
  • Salt and pepper to taste

Preparation Steps

  1. It's best to have all of your ingredients prepared before you start cooking.
  2. Place a large skillet on the grill top or stove. Heat skillet. Coat the bottom of the pan with olive oil. 
  3. Add the onion, garlic, bell pepper, vegetable medley, tomatoes, tomato paste, parsley, thyme, paprika and saffron. Sauté until fragrant. (about 2 minutes)
  4. Add the cooked diced Klondike Gourmet Medley and sauté together with the onion mixture for a few minutes. Add the vegetable stock.
  5. Gently stir to combine all ingredients and allow the paella to cook and reduce down the stock (about 15 minutes)
  6. Remove paella and cover to keep warm
  7. Serve with a lemon wedge and enjoy!
