Potato Scallops With Cucumber Dill Sauce

  • 4 cups Klondike RoseĀ® Potatoes, mashed
  • 1 cup green onions, chopped
  • 1/2 cup blue cheese, crumbled
  • 1 tsp. tarragon
  • 1 tsp. paprika
  • 3 eggs
  • 2 cups italian seasoned bread crumbs
  • 1 package bacon
  • Salt and pepper to taste
  • Toothpicks

For Dill Sauce:

  • 2 cucumbers, peeled, seeded and finely chopped
  • 1 cup mayonnaise
  • 1 cup yogurt
  • 1/4 cup freshly chopped dill
  • 1 tsp red chili flakes
  • Salt and pepper to taste

Preparation Steps

  1. In a large bowl combine the mashed potatoes, green onions, blue cheese, tarragon, paprika, eggs, salt and pepper. Completely mix ingredients together.
  2. Pour the bread crumbs onto a plate and set aside.
  3. Take a 1/3 cup and portion out the potato mixture. Shape into scallops and dredge into the bread crumbs. Place on a parchment lined baking sheet.
  4. Wrap each potato scallop in bacon and secure the bacon with a toothpick. Transfer each bacon wrapped bacon scallop onto a parchment lined baking sheet.
  5. Place the potato scallops into a 450 degree oven and bake for approximately 25 minutes or until the bacon is fully cooked. Remove from the oven and serve with your favorite dill sauce. Enjoy!

For Dill Sauce:

  1. Mix all ingredients together.  Refrigerate for 2 hours before serving
