  • 2 (5 lb.) bags of Klondike Rose® Potatoes, mashed with skins on
  • ¼ cup olive oil
  • 1 tsp. salt
  • 3 cups flour
  • ½ tsp. pepper
  • ¼ cup butter
  • 1 medium onion, chopped and sautéed
  • ½ cup cold water
  • 1 egg
  • 1 tsp. baking powder

Preparation Steps

  1. Whisk flour and baking powder together and set aside.
  2. In a large bowl, combine mashed Klondike Rose® potatoes, olive oil, salt and pepper. Add in the flour and baking powder mixture to the bowl and create a well in the middle. Add the water to that well and knead together into soft dough. Set aside and let the dough rest for 30 minutes.
  3. In a separate bowl mix sautéed onions with one cup of mashed potatoes. Set aside.
  4. Flour a work surface. Take your dough ball and cut into four equal parts. Set three parts aside and work with one piece.
  5. Shape into a patty, flour both sides and roll out.
  6. Cut into rectangular shapes. Spoon filling into the center of the rectangle. Spread egg wash along the edges and press edges together to form a pocket.
  7. Brush egg wash on top of the knish.
  8. Repeat until you have used up all your dough and filling.
  9. Put into a 350° F oven for 20 – 25 minutes.
  10. Serve with spicy mustard.
