Potato and Ham Chowder

  • 1 bag Klondike Gourmet® Yellow-Yellow Fleshed Potatoes
  • 4 cups chicken broth
  • 2 Tbsp. cooked, crumbled bacon
  • 3/4 cup diced ham
  • 2-3 sprigs thyme
  • 1 clove garlic, minced
  • 1/4 lb. processed cheese
  • 8 oz. cream cheese
  • 1/2 cup heavy cream
  • 2 Tbsp. flour
  • 2 tsp. olive oil
  • Green onion, chopped

Preparation Steps

  1. In a medium stock pot, sauté bacon, ham, garlic, and onions in olive oil until onions are cooked through.
  2. Chop Klondike Gourmet® Yellow potatoes into cubes and set aside.
  3. Add thyme to the sauté and finish cooking through. Add the potatoes and enough chicken stock to fully cover the potatoes. Allow the mixture to simmer for 20 minutes or until the potatoes are cooked through.
  4. Mix the half and half and flour together to create a slurry. Stir the slurry into the chowder and bring to a boil to thicken.
  5. Reduce heat and add the processed and cream cheese. Stir until melted.
  6. Transfer to a serving dish and garnish with chopped red bell pepper and a sprig of thyme.
