Potato and Arugula Salad

  • 1 lb Klondike® Gourmet Potatoes- halved or quartered
  • 3 tbsp. white rice vinegar
  • 2 cloves minced garlic
  • ¼ tsp. Dijon mustard
  • ¼ tsp. pepper
  • ¼ C. olive oil
  • ½ tsp. sea salt

Preparation Steps

  1. Boil the potatoes for approximately 15 minutes or until tender. Drain and cool completely.
  2. Mix vinegar, garlic, salt, pepper, mustard, and olive oil with a whisk. Whisk vigorously until it starts to thicken.
  3. Toss potatoes and arugula with dressing mixture. Serve.
