Patatas Bravas

  • 4 large Klondike Goldust potatoes, parboiled and cubed
  • 1 large tomato, halved, seeded and roasted until soft
  • ½ small red onion, finely chopped
  • 2 cloves garlic, finely chopped
  • 1 Tbsp. smoked paprika
  • ¾ cup prepared mayonnaise
  • Olive oil
  • Tabasco
  • Sherry vinegar
  • Salt and freshly ground pepper
  • Parsley

Preparation Steps

  1. In a small sauté pan heat one tablespoon of oil over medium heat. Add the onion and garlic and cook until translucent, about 5 minutes. Add the paprika and cook for 30 seconds and let cool slightly.
  2. Combine the onion mixture, mayonnaise, tomato, Tabasco and vinegar in a food processor and process until smooth, season with salt and pepper. Transfer the mixture into a bowl, cover and refrigerate for 30 minutes.
  3. Preheat oven to 375° F. Place a baking sheet in the oven.
  4. Heat a couple inches olive oil in a large skillet until it begins to simmer. Add potatoes, season with salt and pepper and cook until golden brown on all sides. Remove the potatoes to a paper towel lined plate for a moment to drain the excess oil. Carefully remove the hot baking sheet and put the potatoes on the pan in an even layer and bake until crisp, about 10 minutes. Remove the pan and season the potatoes with a bit more salt. Transfer to a platter and drizzle with the tomato mixture and garnish with parsley.
