  • 4 cups Klondike Goldust┬« potatoes
  • 1-1/2 cups flour
  • 1/2 cup heavy cream
  • 1 tsp. salt
  • 2 tsp. sugar
  • 1/4 cup butter

Preparation Steps

  1. Boil until tender, then rice or mash potatoes with some butter
  2. In bowl, add the potatoes, cream, sugar, salt and flour
  3. Mix ingredients together and then knead the mixture until it pulls together as a soft dough mass
  4. Divide into even pieces (about 12 - 16) and set aside
  5. Flour your work surface and rolling pin
  6. Coat the surface of your first dough ball with flour, then roll out to desired thickness (should be relatively thin)
  7. Heat a griddle or Lefsa pan to 400┬░ F.
  8. Carefully transfer to griddle and cook on each side approximately 30 seconds or until both sides are brown
  9. Once cooked, place between warm towels to steam the flatbread
  10. Repeat
