Klondike Gourmet® Medley Wraps

  • 1 bag Klondike Gourmet® Medley potatoes, diced
  • Juice of fresh lime
  • 2 cups salsa
  • 1 cup canned black beans, drained, rinsed
  • ½ cup green and red pepper, diced
  • 4- 10 inch flour tortillas
  • ½ cup cilantro, chopped
  • ½ cup celery or radish, chopped
  • 1 cup Colby jack cheese, shredded
  • ½ cup green onions, chopped
  • ½ cup sour cream

Preparation Steps

  1. In a medium pot, boil the potatoes about 15 minutes or until tender. Drain well and set aside.
  2. In a large mixing bowl, combine lime juice and salsa. Add potatoes and all other ingredients and stir to combine.
  3. Warm tortillas.
  4. Place one warm tortilla on a plate. Top with ¼ of the mixture. Roll up tortilla, folding up ends to that the mixture doesn’t fall out. Serve.
