Deep Fried Mashed Klondike Goldust® Potatoes

  • 3 medium Klondike Goldust® potatoes, chopped
  • ¼ cup milk
  • ¼ cup butter
  • 1 tsp. salt
  • ½ tsp. white pepper
  • 1 Tbsp. chicken broth
  • ¼ cup scallions, chopped
  • Pinch of nutmeg
  • 1 cup flour
  • 4 eggs
  • ½ cup buttermilk
  • 4 cups breadcrumbs

Preparation Steps

  1. Place Klondike Goldust potatoes in boiling water and cook until tender. Drain water from potatoes and return potatoes to pan. Add milk, butter, salt, white pepper, chicken broth, and scallions; mash until smooth.
  2. Spread onto cookie sheet and cool. When cool, form into cakes. Then dredge in flour, then egg wash and coat well with breadcrumbs.
  3. Place in deep fat fryer set at 350°F and cook until golden brown.
  4. Serve.
