Crock-Pot Potato Chowder

Ingredients

  • 2 medium Klondike Goldust potatoes, cubed
  • 4 oz Canadia bacon, 1/4 inch pieces
  • 1 large carrot, diced
  • 1 cup leeks, sliced
  • 3 garlic cloves, minced
  • 4 cups chicken broth
  • 1/2 cup barley
  • 1 bay leaf
  • 1/4 tsp. dried thyme
  • 1/4 tsp. pepper
  • 1 cup half and half

Preparation Steps

  1. In a Crock-Pot, combine all ingredients except for the half and half. Cover and cook on low for 4-6 hours.
  2. Before serving stir in half and half. Let sit uncovered for 10 minutes.
  3. Enjoy.
