Coconut Cream Mashed Potato Easter Eggs

- 2 medium Klondike Goldust® potatoes, cooked and mashed
- 2 - 16 oz. bags of coconut
- 2 tsp. vanilla
- 1/2 tsp. salt
- 6 lb. confectioners sugar
- 2 lb. melted chocolate
- Thoroughly mix Klondike Goldust potatoes, coconut, salt and vanilla.
- Gradually add sugar and mix until thoroughly blended. Shape into eggs and chill overnight.
- Dip into chocolate and set onto waxed paper to harden.
- Decorate the top to your liking with chocolate or nuts.
