Cheesy Salsa Potatoes

  • 8 cups Klondike Rose® potatoes, hash browned
  • 1 cup pico de gallo or salsa
  • 2 cups shredded cheddar cheese
  • 1/2 cup finely chopped onions
  • 1/2 cup sour cream
  • 1 can of cheddar cheese soup
  • 1/2 tsp. pepper
  • 1/2 cup unseasoned bread crumbs
  • 1/4 cup butter or margarine, melted

Preparation Steps

  1. Heat oven to 350° F. Grease 13×9 inch baking dish or pan. In large bowl, mix cheese, pico de gallo/salsa, onion, sour cream, soup and pepper. Add potatoes and mix well. Spread in baking dish.
  2. In small bowl, mix bread crumbs and melted butter. Sprinkle over potatoes.
  3. Bake 45 to 60 minutes or until cheese is melted and potatoes are tender.
  4. Serve with additional pico de gallo.
