Cajun Potato Salad

  • 6 cups cooked Klondike potatoes, diced
  • 1 cup celery, finely chopped
  • 1 cup cucumber, diced
  • 1/2 cup green onions, chopped
  • 1 cup red bell pepper, diced
  • 1/2 cup yellow bell pepper, diced
  • 1/2 cup green bell pepper, diced
  • 1/2 cup cajun salad dressing

Cajun Salad Dressing:

  • 1/2 cup vegetable oil
  • 3 Tbs ric vinegar
  • 1 Tbs dijon mustard
  • 1 Tbs sugar
  • 1 Tbs Cajun Seasoning Mix

Cajun Seasoning Mix:

  • 1 Tbs granulated garlic powder
  • 2 tsp paprika
  • 1 tsp smoked paprika
  • 1 Tbs onion powder
  • 1/2 tsp cayenne pepper (adjust to your taste buds)
  • 2 tsp dried oregano
  • 2 tsp dried thyme
  • 1 tsp red pepper flakes (adjust to your taste buds)
  • 2 tsp salt
  • 2 tsp black pepper

Preparation Steps

  1. Dice the Klondike potatoes into 1/2 in. diced. Place the diced potatoes into a large pot and cover with cold water. Bring to a boil and cook for about 8 minutes. or until potato pieces are al dente. Strain and rinse with cold water. Make sure potatoes are cooled completely.
  2. In a large bowl combine the cooled diced potatoes, celery, cucumber, green onions, and various bell peppers. Pour the cajun salad dressing over the salad and carefully mix together to incorporate. Let marinade for 30 minutes in the refrigerator before serving.

Cajun Salad Dressing:

  1. Whisk all salad dressing ingredients together in a bown. Use as needed.

Cajun Seasoning Mix:

  1. Whisk all together in a small  bowl. Store in a airtight container. Use as needed.
