American Potato Salad

  • 1 (1.5 lbs) bag of Klondike Medley┬« Potatoes
  • 1/2 cup mayonnaise
  • 4 hard-boiled eggs
  • 1/4 cup relish
  • 1 Tbsp. mustard
  • 2 Tbsp. freshly chopped dill
  • 1/2 cup green onion
  • Salt and pepper to taste

Preparation Steps

  1. Place potatoes in a pot of cold water and bring to a boil. Boil potatoes until they are soft.
  2. Remove potatoes and chop into small cubes.
  3. Place potatoes in a bowl and gently fold green onion, relish, eggs, mustard, mayonnaise and dill without breaking potatoes. Add salt and pepper to taste.
  4. Cover mixture with plastic wrap and refrigerate for 24 hours. Finalize by garnishing the mixture with some freshly chopped dill and pepper.
