Ranch Potato Salad

2 bags Klondike Rose Express® or Klondike Goldust Express® Fresh Microwave Baby Potatoes

6 hard boiled eggs (chopped)

1/2 lb. bacon

1/2 medium yellow onion (chopped)

1/2 cup celery (chopped)

2 cups Ranch dressing

salt and pepper to taste

cheddar cheese (grated)

  • In a saucepan, boil eggs in water for 15 minutes.
  • Meanwhile, microwave one bag Klondike Express® for six minutes. When completed, take out of microwave and set aside to cool. Repeat with second bag.
  • Cook bacon, drain grease and crumble.
  • Chop onion and celery, placing into large bowl. Chop potatoes and add to bowl. Add crumbled bacon to bowl. When eggs are done boiling, place under cold running water to cool down. Shell and chop eggs then place into large bowl.
  • To potato mixture: add Ranch dressing and gently mix together. Salt and Pepper to taste.
  • Garnish with grated cheddar cheese
