1 lb Klondike® Gourmet Potatoes- halved or quartered
3 tbsp. white rice vinegar
2 cloves minced garlic
¼ tsp. Dijon mustard
¼ tsp. pepper
¼ C. olive oil
½ tsp. sea salt
•Boil the potatoes for approximately 15 minutes or until tender. Drain and cool completely.
•Mix vinegar, garlic, salt, pepper, mustard, and olive oil with a whisk. Whisk vigorously until it starts to thicken.
•Toss potatoes and arugula with dressing mixture. Serve.
